We know Paul Newman passed away in 2008, and Cars 2 released in 2011, and we know Doc Hudson only made a cameo in a image in that movie.

One of the movie's many deleted scenes featured a flashback of Lightning McQueen and Doc Hudson racing around Willy's Butte, however, Doc's engine starts to stutter and the latter dies on-screen. This scene was considered too depressing for a kids movie, so it had to be removed.
